Corn tortillas stuffed with Simplot Good Grains™ Cilantro Lime Rice & Fire-Roasted Corn Fiesta and Scandinavian Blend vegetables—topped with a creamy white cheese sauce.
Preparation Instructions:
Step 1
Prepare vegetables according to package instructions. Hold warm.
Step 2
In a large pan; warm up cheese sauce over medium-high heat. Add in Cilantro Lime Rice & Fire-Roasted Corn Fiesta and stir. Hold warm.
Step 3
For each serving; place 1 tortilla on serving dish. Scoop 1/2 cup vegetables onto tortilla. Place 1/2 cup cheesy rice on vegetables. Roll up enchilada. Top with 1 oz. cheese sauce.
