Street Food Style Thai Fried Rice

Thailand is famous for its street food, especially fried rice. This version features perfectly cooked wok-fried brown rice, lots of veggies, scrambled egg, and a punchy-savory sauce made with Thai chilies. Did we mention it’s a snap to make?
Preparation Instructions:
Step 1
Combine Thai chilies and fish sauce. Refrigerate for service.
Step 2
Place a large wok or tilting skillet over medium heat. Add vegetable oil and heat until oil starts shimmering, about 1-2 minutes. Add garlic, stirring until oil is fragrant, about 1 minute. Stir in frozen rice and cook until heated through. Push rice to one side of the wok or skillet. Add eggs and quickly cook, while stirring, until eggs are soft scrambled, about 5 minutes. Add peas and carrots, and caramelized onions. Stir to combine until heated through. Season with soy sauce, oyster sauce and sugar. Continue stirring to distribute seasoning. Stir in chopped green onions and remove from heat.
Step 3
Portion 8 oz. fried rice into cups or bowls and serve with 1 fl. oz. Thai chili-fish sauce and a lime wedge on the side.
