Steak and Wedge Fries with Avocado Maitre D' Butter

A tender, pan-seared steak topped with avocado garlic butter and served alongside crispy Simplot SeasonedCRISP® Delivery+® Savory Battered Wedges.
Preparation Instructions:
Step 1
Thaw avocado according to package directions. Add avocado pulp, butter, serrano pepper, garlic, lemon juice and Kosher salt to the bowl of a food processor and pulse until the mixture is evenly combined. Transfer to a plastic container or place on parchment paper and roll up into a log. Refrigerate until firm, about an hour.
Step 2
Season steaks generously on both sides. Cook on preheated flat iron skillet or griddle over medium-high heat until desired doneness. Transfer to a plate and rest for 3-5 minutes.
Step 3
Prepare potato wedges according to package instructions. Hold warm.
Step 4
For each serving; place steak on a wooden board, top with 2 oz. avocado butter and serve with 4 oz. potato wedges.
