Perfect for those who want a healthy, savory breakfast with a spicy little kick. Top a base of cilantro lime rice, fire-roasted corn and black beans with a fried egg, guacamole, salsa, jalapeños and cotija. Serve with cilantro-lime dressing and pumpkin seeds.
Preparation Instructions:
Step 1
Thaw guacamole according to package instructions.
Step 2
In a blender, combine the olive oil, lime juice, cilantro, garlic powder, salt and pepper. Blend until smooth. Set aside for service.
Step 3
Prepare cilantro lime rice according to package instructions. Hold warm for service.
Step 4
For each portion, place 4 oz. cilantro lime rice in the bottom of a serving bowl. Top with a fried egg, 1 1/2 oz. guacamole, 1/4 oz. cotija, 1 oz. salsa, and 1/2 sliced jalapeño. Drizzle with 1 fl. oz. cilantro-lime dressing, and garnish with 1/4 oz. pumpkin seeds.
