Roasted Broccoli with Parmesan and Panko

A healthy broccoli dish full of bright, satisfying flavors with a spicy kick. It's a definite crowd-pleaser.
Preparation Instructions:
Step 1
Preheat convection oven to 400˚F.
Step 2
In a large bowl, whisk together 2 fl. oz. of the olive oil, lemon zest, lemon juice and red pepper flakes. Add the broccoli and toss to coat. Season with salt and pepper and toss again to coat. Transfer to a hotel pan and cook in a 400°F convection oven until broccoli is lightly roasted about 12-15 minutes. Combine the remaining 1 fl. oz. of olive oil, Panko and Parmesan and sprinkle over the top of the broccoli. Return pan to the oven for 5-7 minutes until golden brown on top.
