A refreshing, portable salad with the flavors of Hawaii— Poke, mango, and a sweet chili dressing. Enjoy!
Preparation Instructions:
Step 1
Thaw edamame and mango according to package instructions. Keep separate and chill.
Step 2
Prepare red quinoa according to package instructions. Chill.
Step 3
Gently fold the poke and mango together. Hold chilled.
Step 4
For each portion, layer ingredients in a clear cup; 3 oz. poke-mango mixture, 2 oz. shelled edamame, and 2 oz. quinoa. Finish with 1 oz. spring mix. Cover with lid. Serve with 2 fl. oz. dressing in a lidded portion cup.
