Hearty multi-grain orzo pasta and red quinoa combined with the Mediterranean-inspired flavors of shrimp, olive oil, lemon and creamy avocado make for a satisfying meal.
Preparation Instructions:
Step 1
Thaw avocado according to package instructions.
Step 2
Prepare grain blend and haricot vert according to package instructions. Chill and hold separately.
Step 3
Place avocado, olive oil, lemon juice and water in a blender. Process until smooth and creamy. Season with salt and pepper. Combine 8 fl. oz. dressing and grain blend, toss to coat. Rest for 30 minutes to allow flavors to blend.
Step 4
For each serving; place 8 oz. (1 cup) of grain blend in serving bowl. Top each with 4 shrimp, 1 1/2 oz. haricot vert, and 1 oz. tomatoes. Drizzle with 1/2 fl. oz. avocado dressing.
