Greek Salad with Grains, Falafel and Tzatziki

A vibrant Greek salad with grains, veggies, crispy falafel, and tangy tzatziki. Mediterranean goodness and a fun, healthy twist on the lunch menu. Students will love it!
Preparation Instructions:
Step 1
The day before service, thaw orzo grain blend and flatbread under refrigeration overnight.
Step 2
Preheat oven to 350°F.
Step 3
Prepare orzo grain blend. Place on a full-size sheet pan and cook at 350°F for 8-10 minutes. Immediately transfer pan to refrigerator to cool, hold there for salad assembly.
Step 4
Prepare falafel according to package instructions.
Step 5
To make the dressing, combine lemon juice, mustard, honey and salt in a medium bowl. Slowly add olive oil, whisking continuously.
Step 6
Pour lemon dressing over chilled orzo grain blend and fold with a spatula to combine.
Step 7
To assemble salad, place #16 disher (1/4 cup) of romaine lettuce on the bottom of a 3 compartment salad container. Top with #4 disher (1 cup) of orzo salad. Add one half pita bread and 1 oz. tzatziki to side compartments. Serve with 3 hot falafels in a boat.
