Building a burrito bowl is easy when you have all the "must-have" ingredients ready to go. Easy prep for the kitchen, delicious and fun for the kids–it's a winner!
Preparation Instructions:
Step 1
The day before service, thaw guacamole under refrigeration overnight.
Step 2
Preheat large sauté pan or tilt skillet over medium-high heat. Add oil. Once oil is shimmering, add corn and black beans. Cook for 5-6 minutes, stirring often.
Step 3
Spray a 2-inch deep steam table pan with pan release. Pour frozen rice into a solid steam table pan and cover with plastic wrap. Steam for 6 minutes. After cooking, cool rice slighly then pour lime juice over rice and sprinkle cilantro and salt evenly on top. Fluff rice to incorporate juice and cilantro evenly. Do not over mix or rice will become sticky.
Step 4
Prepare fajita chicken according to manufacturer's directions.
Step 5
For service, place ingredients in each serving bowl: 1 cup (#4 disher) brown rice, 1/2 cup (#8 disher) corn and black beans, 1/3 cup (#12 disher 2 oz.) chicken, 2 Tbsp. (#30 disher) guacamole, 2 Tbsp. (1 oz. ladle) salsa, and 1 Tbsp. cheddar cheese.
