Here’s a tasty and portable BBQ combo featuring pulled pork on a fluffy bun, flame-roasted corn and SIDEWINDERS™ Fries. An all-in-one lunch that students and adults will love.
Preparation Instructions:
Step 1
The day before service, thaw pulled pork and corn under refrigeration overnight.
Step 2
Preheat convection oven to 400°F or conventional oven to 450°F.
Step 3
Prepare pork. On day of service, place pork in a 2-inch half-size pan and heat in the steamer. Drain fat. Chop any visibly large pieces.
Step 4
Prepare SIDEWINDERS™ fries. Arrange fries in a single layer on sheet pans. In convection oven, bake for 18-22 minutes. In conventional oven, bake for 25-30 minutes.
Step 5
Prepare corn. Place corn in a 2-inch full-size perforated pan. Place in steamer, uncovered, and steam for approximately 3-5 minutes. Transfer steamed corn to a full-size solid pan.
Step 6
Assemble sliders. Using a #30 disher, place 2 Tbsp. pork on the bottom half of each bun. Top with other half.
Step 7
For K-5, serve 1 slider, 1/4 cup corn, and 1/4 cup fries in a boat for grab-and-go. For grades 6-12, serve 2 sliders, 1/2 cup corn, and 1/2 cup fries.
