Soy Caramel Calamari Salad With Grilled Pineapple

Crispy Captain's Catch Calamari tossed in a delicious caramel sauce and serves with a fresh salad.
Instructions:
CARAMEL
1. Add the sugar into a heavy based saucepan and heat until a caramel forms.
2. Add the ginger, soy sauce, water and chilli. Set aside to cool.
SALAD
3. Blanch Edgell Corn following packet directions. Thinly slice the pineapple and char grill, set aside.
4. Combine cos lettuce, capsicum, spring onion, corn and coriander.
5. Cook frozen Captain's Catch Calamari following packet directions and toss in the caramel sauce.
6. Place the pineapple on the base and layer the salad and calamari on top.
