Smashed Avo Toast with Poached Egg

Classic combination of mint, peas and avocado for this delicious smashed avo dish.
Instructions:
1. Cook frozen Edgell Peas following packet directions. Refresh in iced water.
2. Mash peas. Add Edgell Avocado, mint, lemon juice, lemon zest, honey, fetta and mash. Season to taste.
3. Spread pea mixture over toast and top with an egg. Grind over cracked black pepper and top with torn mint leaves to serve.
