Open Salt Bush Kangaroo Steak Sandwich With Bush Tomato Relish

Native Australian ingredients star in this contemporary open steak sandwich recipe, served, of course, with Edgell chips!
Instructions:
1. Sauté Edgell Onion in oil and butter for 15 minutes. Add sugar and cook for a further 30 minutes until caramelised.
2. Warm panini rolls.
3. Mix relish with ground bush tomato. Set aside.
4. Season kangaroo minute steak with Old Man Saltbush and sear 1 minute each side.
5. Slice panini lengthways. Using one half per serve, spread panini with relish, top with rocket, cheese, kangaroo steak and caramelised onion. Serve with cooked Edgell Chips.
